The Beef Marketing Committee in collaboration with the Highland Cattle Foundation is working with Dr. Information gathered recently from an email survey sent out to all AHCA members about how the Beef Marketing Committee would best serve their needs, led the Committee to seek out an individual and facility capable of testing and reporting to us scientific, data-driven information about the special qualities of Highland beef. These cattle fit into a variety of operations from the small farm to large commercial beef operations. Yet at the same time they can withstand harsh winters making them suitable for a variety of environments. They shed out earlier in the spring and produce less hair in a warmer climate. The double hair coat allows the animal to marble naturally on low input forage while producing lean, low fat, high quality cuts of beef. Cows are protective mothers that guard against predators, however, they are a docile breed. Calving ease is a reputable trait with average birth weight at 70 lbs. Highlands are hardy and vigorous calves are up nursing quickly. Highlands perform well in a variety of feed scenarios whether brush, forage/grass based or grain finished. They have been used in the US and worldwide to clear brush lots, for Oak Savannah restoration and grazing improvement projects. Food scientists at SAC led by Dr Ivy Barclay, Head of the Food Science & Technology Department have published analytical results which have been determined on Pure Highland Beef cuts comparing each grade of meat with results from all beef published by McCance & Widdowson* At the Ministry of Agriculture Fisheries and Food (MAFF).This moderate framed breed is an excellent browser. Scientific tests carried out on Guaranteed Pure Highland Beef by the Scottish Agricultural College – the National College for Food, Land and Environmental Studies – demonstrate convincing evidence that GPHB is significantly lower in Fat and Cholesterol, and higher in Protein and Iron than other beef. Highland premium beef is beef that comes from Highland cattle that is superior in flavor, tenderness and cooking. Snowman, Our Former Herd Sire What is Highland Premium Beef? – Adapted from the American Highland Cattle Association The British Royal family keeps a large herd of Highlands at Balmoral Castle, near Braemar, Scotland, and considers them their beef animal of choice. In the British Isles, Highland beef is recognized as the finest available and fetches premium prices. Highland and Highland crosses have graded in the top of their respective classes at the prestigious National Western Stock Show in Denver, Colorado. Highland beef is meat that is lean, well marbled and flavorful with little outside waste fat (they are insulated by long hair rather than a thick layer of fat). Today’s consumer prefers lean, premium meat, and the Highland beef is ideally suited to meet this demand. Despite long horns and an unusual appearance, Highlands are even-tempered, bulls as well as cows. These cattle are excellent browsers, able to clear a brush lot with speed and efficiency. They also adapt well to more southerly climates with successful herds as far south as Texas and Georgia. They are raised as far north as Alaska and the Scandinavian countries. Cold weather and snow have little effect on them. Highlands require little in the way of shelter, feed supplements, or expensive grain to achieve and maintain good condition. It is one of the oldest purebred cattle breeds in the world, extremely hardy and first developed on the cold north Atlantic coast of Scotland. Highland (sometimes called Scottish Highland) is a distinct breed of cattle that are generally smaller than Angus and unique in their looks because of their long hair and horns.
